Vegan Banana Brownies
(adapted from Banana Split Pudding Brownies – Vegan with a Vengeance)
120g dark chocolate
2 ripe bananas
2 tablespoons of soy margarine
1 packet (8g) vanilla sugar
30g cocoa powder
1/4 teaspoon bicarbonate
I melted the chocolate, together with the butter, in the microwave, stirring every 30 seconds.
Mash the bananas with a fork, add the sugar and the vanilla sugar. Mix it. Add the chocolate and butter and mix with the fork.
Sift the flour, cocoa powder and bicarbonate in another bowl. Add this gently to the banana mixture, stir while doing this.
Preheat your oven on 200°C. Pour the batter into a baking tin. I used a turban baking tin, because I don’t own one for brownies. Bake it for about 40 minutes, let it cool and serve with some extra banana or powdered sugar. It gets better when you let it rest in the fridge for about half an hour.
For those who own Vegan with a Vengeance: you’ll see that there’s not much adapted. However, I didn’t use the topping layer and made ‘simple’ brownies. I think if I added the extra banana-layer, the banana would overwhelm the taste of chocolate.
