It’s the second day of Vegan MoFo, time flies by.
In the september issue of Visita Magazine (in Dutch), I share my chocolade nut spread. It’s a lovely cruelty free replacement of the less healthy nutella. It’s kinda heavy, but you can make it creamier by adding more nut (or another plant) milk. Instead of half hazelnuts / half almonds, you can go for a full cup of hazelnuts to have a more traditional chocolate spread.
Chocolade Nut Spread
½ cup hazelnuts
½ cup almonds
1/3 cup dark chocolate
1 tsp coconut oil
½ cup almondmilk
½ tsp vanilla extract
Roast the nuts for 10 minutes in a 175°C oven.
Melt the chocolate together with the coconut oil au bain marie.
Get the nuts out of the oven and take a clean towel to rub the skin of the hazelnuts.
Mix the nuts in a food processor.
Add the melted chocolate and the vanilla extract and mix again.
Add, bit by bit while mixing, the almond milk.
The more creamy you want the spread, the more you have to mix (and perhaps add some extra milk).
It tastes wonderful on a piece of whole grain bread or as a topping on a pancake or on your oatmeal. Or of course you can eat i straight from the jar… I might or I might have not done that.. 😉
